This natural Geisha was harvested at peak ripeness and underwent a 24-hour dry oxidation phase within its harvest sack—allowing the cherries to begin their natural fermentation process while retaining their structural integrity. After oxidation, the cherries were floated to remove underripe or damaged fruit, ensuring only the highest-quality cherries moved forward. The lot was then transferred to raised African beds and sun-dried for 24 days under controlled airflow and light exposure to promote even dehydration and preserve the coffee’s aromatic potential.
