In the Gedeo language, “Worka” means gold and “Wuri” means high altitude. Both names fit a coffee grown in the steep, mist-cooled hills of Gedeb, just south of Yirgacheffe, where some of the highest coffee farms on earth meet some of the most refined washed processing in Ethiopia.

在格德奧語中,「沃卡」(Worka)意為黃金,「烏裡」(Wuri)意為高海拔。這兩個名字都恰如其分地描述了生長在格德布陡峭、雲霧繚繞的山丘上的咖啡。格德布位於耶加雪菲以南,那裡擁有世界上海拔最高的咖啡種植園之一,並採用埃塞俄比亞最精細的水洗處理工藝。



This is classic Ethiopian washed processing. Cherry is depulped, fermented to loosen the fruit, then washed clean so only the seed and its sugars remain. The parchment dries slowly on raised beds for twelve to fifteen days, raked and turned by hand and shaded during the hottest hours. The result is the transparency washed coffee is prized for, where origin and variety speak without the heavier fruit of a natural.

這是經典的埃塞俄比亞水洗處理法。咖啡果實去皮後,發酵使果肉鬆散,然後清洗乾淨,只留下果核及其糖分。有內襯的咖啡豆在架高的曬床上緩慢晾曬1215天,期間需手工翻動並遮陰。最後得到的咖啡具有水洗咖啡特有的清澈透明感,產地和品種的風味得以充分展現,而沒有日曬咖啡濃鬱的果香。
